I found out a little over a week ago that I was pregnant. Over the moon about it! So I called my doctor the next morning asking about a confirmation appointment. They basically told me they don't do that anymore unless it is considered high risk. Otherwise they wait until you are an estimated 8-10 weeks along. I know close to nothing about this whole doctor process right now. Is this normal?

Completely normal. Most OB practices don't confirm with a blood test/beta anymore unless there is a history of loss/complications. First appointments tend to be around the 8-10 wk mark.
I was actually shocked when my office had me come in for a blood draw. Most of my friends had not had one, and had appointments scheduled just based off their positive home tests. My office wouldn't schedule my u/s and first OB appt until they had a positive beta. I get to see my peanut for the first time next Wed at 7 weeks:)

Doctors offices rarely ever confirmed with blood tests unless worried about complications. "Confirmation" appointments usually consisted of urine tests that were simply more sensitive and accurate than OTC tests.
Since pee sticks are not basically as accurate at home as they are in the office (thanks to the development of the "pink" tests) most OBGYNs don't do appointments before 8-10 weeks. They are considered a waste of resources and unnecessary cost to insurance providers or patients. So, yes, it's completely normal.

Congratulations!! That is a normal time for you to come in. I met with my NP at 6 weeks and she just gave me a bunch of literature and I did some blood work. She also explained how the rest of my appointments were going to work going forward. I was actually surprised they wanted to see me that early, most ladies I have talked to said they had to wait until 12 weeks to get their first appointment.

I had a confirmation blood test and an ultrasound to check for an ectopic because of my medical history, but normally my OB just does a first appt around 8 weeks. I was really happy to get the confirmation blood tests because I would've went crazy waiting. Congrats on the pregnancy!
