I am in this rut where I am just eating the same things every single night for dinner. And while they are delicious and amazing - it's getting to be a bit monotonous. The meals we have weekly are: nachos (with ground turkey), chicken fajitas, turkey burgers, sesame chicken, and some kind of grilled marinated meat (chicken, pork, steak, etc.) This changes in the winter to more pasta/soup/casserole type dishes. But still... we eat the same things all the damn time.
I'd like to hear what your go-to meals are. I like go-to meals because it means they are relatively easy to make, somewhat quick, and most importantly... delicious! I'd be happy to share my recipes, too. They're all basically a 30-minute or less recipes (from fridge to stove/oven/grill to plate in under 30 minutes). And they're also pretty healthy - most of them clocking in under 500 calories for a dinner-sized portion.
So what are your favorite go-to meals and/or recipes?

xcal, I will take your healthy slow cooker recipes please.
There is this one slow cooker recipe I saw on pinterest (a whole chicken with heads of garlic and lemon slices and tons of rosemary) that I may have to make on Saturday or whatever day boyfriend gets sprung from the hospital. I'll stock up on veggie side dishes (even if they're frozen, oh the horror), and we'll start having a lean protein with two veggies as sides in order to cut down on the carbs.

I love soups and stews in the slow cooker year round Hearty salads (quinoa tabbouleh, bean and vegetable salad, etc) We've really started loving Jamie Oliver's 30 minute meals for ideas Frittata with any veggies we can find or souffle for quick easy meals
I also frequent a lot of recipe blogs and hunt through looking for new ideas; that's where I get most of my ideas from.

We have a panini maker and have been throwing everything in it. We do sandwiches, warmed wraps etc. This week we did lemon bakes sole (fish) and last night we did salmon spring rolls.

mmm Also Stuffed bell peppers,Pad Thai, and Pho.. but those are recipes I just create, no actual recipe.. Sorry :/

I make a lot of recipes from Skinnytaste and my favorite is the buffalo turkey burgers. I don't know why I never thought to put Frank's Red Hot in my burgers before. With the blue cheese broccoli slaw on top, I could easily eat 10 of them hahaha
Lately, I've been doing tilapia "packets" in the oven. I just drizzle the fish with a little bit of EVOO, add some chopped garlic, top with a couple slices of lemon and then pop it in the oven for 12ish minutes. So quick, easy, and yummy!

My favorite go-to recipe place is skinnytaste also. My favorite recipe of her's (and FI's as well) is the oven fried chicken. Delicious with just the right amount of spicy!

I am looking forward to the day that I have a slow cooker! I like to do a pesto chicken during the summer. Make some homemade pesto and throw it on top of chicken breasts and tomatoes and mozzarella cheese in the oven till the chicken is cooked. So yummy.
